I can’t believe it was 18 years ago today. I remember waking up that morning and my uncle was at my house instead of my parents – best of all, he said I didn’t have to go to church (even though it was a Sunday). We needed to get to the hospital to meet my new baby brother!
Yes, he was the cutest baby ever. And his head was off the growth charts (literally). Must be all those brains!
JR & I have a unique relationship since we’re almost ten years apart. It was awesome to have that time between us – I got to have a real life baby at home when most of my friends were playing with baby dolls!
We joke that we each got be “an only child” – I was for almost 10 years before he was born, then he had my parents to himself for the majority of the 7 years I was in college and graduate school.
For the family traits we share and things we have in common, he’s much more outgoing and social than I ever was. He’s so incredibly talented – the captain of the tennis team, lead in the school musical, and class president. He’s incredibly well spoken, confident, independent, a great writer and dancer. He can run 8 miles at the drop of a hat. My brother is one of my favorite people to talk to and to do things with. He’s always been mature for his age, and it’s no surprise he’ll be attending one of the most prestigious colleges around.
Happy 18th birthday, I’m so proud of you!
Excuse our sweaty faces – it was 100 degrees on my wedding day, and he was a dancing machine!
Enough of the sentimentality… some of yesterday’s eats!
I had a strange work schedule yesterday since I went to give a presentation to one of my company’s clients first thing in the morning, even though I usually work the late shift. Since the presentation ended earlier than I had planned, I got to sneak in a spin class before heading in to the office.
I was famished after spin, in spite of having a banana and half of a cherry almond scone before the presentation. I was craving both french toast and an omelette – instead of deciding, I just had both.
1 egg + 1 egg white, 1 slice of Sargento Thin Monterey Jack (they’re only 40 calories per slice and super flavorful).
Leftover cranberry walnut bread had me thinking “french toast” since it was passed around the dinner table Sunday night. It lived up to expectations.
French toast batter: 1 egg, 2-3 Tbsp milk, cinnamon, vanilla
It was gone all too quickly, but held me over through most of my workday. I snacked on some crackers & hummus then grabbed Mexican after work with my parents.
The “sides” that come with fajitas are almost as good as the sizzling stuffing!
I ordered “Fajitas Cancun” which are supposed to be half shrimp, half scallops – but I ordered all shrimp. There had to be 15 shrimp included! I’ll get 3 meals out of this skillet – but all of the rice, beans, and guac were consumed last night!
