Good morning, friends!  It’s been rough getting back in to the swing of things after vacation - so I think a dessert-type breakfast is appropriate today. 

Peanut Butter Cup Soft Serve

1.5 medium, super-ripe bananas, frozen

1/4 cup peanut flour or PB 2 (you can find it here, use referral link VAP443 for $5 off)

1 Tbsp chocolate chips (optional)

Note: A food processor is the best tool to obtain really voluminous soft serve – using a magic bullet or blender works too, but I’ve found the best results with a food processor. 

All you do is add bananas & peanut flour to food processor & process until completely smooth.  You may have to scrape down the sides once or twice to get it evenly mixed.  Stir in chocolate chips at the end, if using.

Approximate nutrition: 280 calories, 7 grams fat, 12 grams protein

Peanut butter would work here too (you’d only need 1-2 Tbsp) and would of course increase the calorie and fat content – but make a much more ice-cream like treat.

I had my frozen breakfast with a hot latte, with pressed Red Velvet flavored coffee & frothed vanilla almond milk.  This $4.99 frother was a great purchase.

    I love banana softserve! Have you seen the “Yonanas” machine? It’s a specialized food processor just for banana softserve!

    Oh man I LOVE banana soft serve but never put peanut flour in it! The soft serve taste great with a warm vitatop :)

    Lately I’ve been using TJ’s greek yogurt mixed with PB2…it is so freakin’ good. It’s like a dessert! Love.

    Yes, it’s always hard getting back into the swing of things after a lovely holiday. This is a great recipe. Unfortunately my food processor recently blew up – I miss it so much. I’ve also never heard of peanut flour so I’d be using peanut butter and making the higher calorie version xx

    I am loving banana soft serve this summer! I have yet to try a pb version so far I have only gotten to chocolate and strawberry cheesecake. I will be making this recipe in the near future whether it is for breakfast or dessert!! love recipes like theses that can be eaten for either meal!
