I didn’t read blogs or post yesterday once I heard about the “blogging day of silence” – there are much more important things going on in our country and I can’t even fathom what the families in CT are going through. Say some prayers and tell your families you love them, okay?
We had my parents, brother, and nana over for dinner on Friday – it was a Mexican feast (I made my enchiladas, which are my brothers’ favorite). I also made a homemade queso and guacamole for appetizers. Lexi couldn’t wait for the guests to arrive.
Since the enchiladas were taking up all the room in the oven, for dessert, I served a crockpot apple crisp (using this recipe - LOVE her blog, by the way) – it was delicious, maybe even too sweet!
I can’t get enough of squash – and this year, it’s more than pumpkin. Butternut is my new favorite (even great in muffins), and it was PERFECT in Angela’s Mexican-themed dish with black beans and spices. I followed her burrito recipe pretty closely, but sautéed a bunch of kale instead of rice to bulk it up a bit. This will make for delicious lunches all week.
Something else I can’t get enough of? Adorable workout clothes, thanks to PV Body. You can read my review of my first package here – as much as I love the capris, I was hoping for some full length leggings for the colder weather – and I got lucky! Don’t mind the lack of makeup and terrible lighting in my “office”. The first set of gear was sent to me for free to review, but I loved it so much I signed up for a monthly subscription!
This month’s top is a bright green, seamless tank with understated thunderbolt designs on it – from Electric Yoga. I LOVE the two-tone colors and that it stays down during a million (almost) chaturangas. It retails for $68 on their website, and I really like the design of their other products.
The leggings were the perfect length, and felt very similar to Lululemon products – no annoying seams and no VPLs! I also love the tiny key pocket in the waistband, which makes them great for running as well as yoga.

You don’t have to wait until the New Year to start healthy habits – if you can eat well and exercise now, you can do it all year long!
