Happy Monday! Instead of the fact that we have a full work week ahead, let’s focus on what’s making today marvelous, thanks to Katie.
I hope that you all are getting an early taste of Spring like we are in Pittsburgh. It’s been great to see some light in the sky past 6 pm, even if we lost an hour of sleep Saturday night.
It was sunny and 65 here yesterday, which called for a ride in the convertible (which my lovely husband cleaned and washed for me while I was off running) to our favorite frozen yogurt spot!
I got cherry and classic vanilla, topped with cherry topping, dark chocolate chips, sprinkles, yogurt pretzels and fried ice-cream sprinkles! They just tasted like graham crackers, but added a nice crunch!
Backtracking a bit, Friday night I made Michelle’s cauliflower based pizza crust (no cheese unlike most recipes call for), topped with caramelized onions, roasted mushrooms, and roasted red peppers. It still didn’t pass the husband test (he knew it wasn’t real crust), but held up better than most other cauliflower crust recipes I’ve tried!
Sunday morning I made another blog recipe, from Janie’s Kitchen – baked banana and chocolate chip donuts, thanks to over ripe bananas from visiting my Nana on Saturday.
I cut the recipe in half (since I have a 6-donut pan), and used whole wheat pastry flour. They didn’t even need a glaze or sugar topping.
One of the best things that happened this past week was a box of #nothingbutgood from my friends at Chobani.
It included a cute little spoon and a sampling of some of their newer products, most of which I haven’t seen in stores yet. The Key Lime Crumble and Almond Coco Loco Flips are out of this world – decadent toppings with delicious new yogurt flavors. I just adored the white chocolate/graham cracker combination and I typically HATE lime flavored anything. The Champions squeeze tubes are perfect for kids (aka my husband), and the little “Bites” are a great mid-afternoon sweet treat that doesn’t outdo your workout. Dark chocolate with coffee or strawberry? Yes, please!
I haven’t tried the pear or banana cups yet, but I’ve heard great things about them- they’ll be part of my breakfasts later this week!
