Have you ever been proud of yourself for the sheer number of tasks you accomplish in a day? Yesterday was one of those days for me. I woke up at 5, worked 8.5 hours, finalized the details for the ‘Burgh Blogger Bash (will post about it later today), ran three miles, caught up with friends (on the phone, e-mail, & G-chat, hi Shar, Kait, Jess & Rach!), went grocery shopping, bought birthday gifts for Bella, made dinner for Adam and I, rented a movie, and went to my parents’ house to visit (mostly to see the birthday dog).
After only 5 hours of sleep, I’m not sure how productive I’ll be today – but I’m hoping for spin class & yoga after work. Thank heavens for leftovers! Dinner last night was an old favorite, enchiladas – red & yellow bell peppers were on sale!

Assembly: flour tortilla shells for Adam/wheat shells for me, sautéed veggies, meat for Adam/black bean patties for me, enchilada sauce, and cheese. Topped with more sauce & more cheese and heated until the cheese melts.

Making them at home gives you the ability to make your Mexican lightened up. This meal used to take me about an hour to prep (I used to cook the veggies in the sauce), but buying jarred sauce made dinner possible in about 25 minutes.

Served with fat-free refried beans and guacamole hummus. Have you guys tried this TJ’s product? Tastes as good (if not better) than regular guac, stays fresh longer, and is superior nutritionally – and easier than making it at home.

Would have been a classy table setting if it were not for the chips on the table – again, healthy version for me!
Rosey joined us for dinner, too.

We hit Red Box to rent Safe House, which I liked even more than I expected – not like it’s difficult to watch Ryan Reynolds for 2 hours, right? Then we had to give the birthday girl her presents!

Earlier in the day my she got a new bone, a doggie “raincoat” (which she hates), and grooming mit, and a squeaky chicken leg. Along with the porcupine we gave her a cloth/rope frisbee (which she’ll destroy within a day or two, I’m sure), a new collar, and a doggie donut hole! They made entire doggie birthday cakes, but Bella never eats anything other than her regular food and treats (no “people food”) and I didn’t want her to get sick.

She was one happy pup! It’s silly that we made such a big deal for her 5th birthday when in the past she just got a collar each year. Better to be a crazy dog lady then a crazy cat lady, right?

Mmmm, I love me some enchiladas! Those look yummy. We try to make Mexican, Indian, and Thai once a week because we love all of them so much, haha. My go-to quick meal is cereal if my hubby is working late (bad, I know…but I am addicted to cereal) or spaghetti squash and meatless (soy) meatballs (I buy the Veggie Patch brand)which are to die for. You were VERY productive yesterday! I just worked a full day and ran 7 miles, lol. Have a great day!
I love TJ’s guacamole hummus, also their kalamata olive hummus.
My go-to quick meal is scrambled egg whites with a bunch of veggies stirred in, with a toasted whole wheat tortilla on the side. Under 10 minutes if the veggies are already chopped
We always have Trader Joe’s turkey meatballs on hand in case we need a quick meal. They are easy to pair up with a grain and veggie and have something made in about 10 minutes. It’s great!
I love enchiladas! It’s so much easier just to buy the sauce sometimes. And dog birthdays are a must!

My mom and sister are coming to visit tonight and I’m actually planning to make enchiladas. They’re so easy to throw together and it’s easy to pack in a lot of veggies!

My quick meals are usually big veggie mix ups or something roasted in the oven. Like tonight I just threw some brussles and cauliflower in and sauteed some tempeh. 15 min and DONE.
