Let’s get to yesterday’s eats…
Coffee, en route to work, 7:30 AM: Grande dark roast with steamed soy and sugar free vanilla
Breakfast #2, 8:30 am: PB & J overnight oats – 1/3 cup oat bran, cooked with 1 cup water, 1/4 cup peanut flour, 1 Tbsp sugar free strawberry preserves, and 1 tsp chia seeds
I think my chia seeds are broken – they didn’t thicken these oats very well!
Lunch, 12:30 pm: Pita Pit! Hummus pita with lots of changes – no olives, light on the feta, added roasted red peppers, sprouts, romaine, extra spinach & tomato
My pitas always turn in to salads – eaten with a fork, pita on the side!
Snack, 2:30 pm: 2 clementines – I don’t like this whole “Cuties are For Kids” thing. They’re for me too, thank you very much.
Fiesta! 7pm: Totally worth 1.5 hours of cooking and 1/2 hour of grocery shopping….
Yogi Guacamole a la Mama Pea (with garbanzos)
Ground beef for the carnivores (mom, dad, brother, hubby)
Veggies for all – the best part of fajitas!

Trader Jose’s refried beans – this is the first time I’ve tried them and I’ll never buy a different brand again!
Smokin’ hot fajita pans (for serving, not for cooking) are the key to that signature sizzle!
What a feast! My full belly and the beautiful Pittsburgh weather called for a long walk with Bella after dinner.
Don’t judge by the crappy action shot – you try to get a Jack Russell to hold still for a photo.
I will never tire of Mexican food! Already looking forward to leftovers for lunch.
