ONE thing I prefer to make at home once in a while:

Softserve - specifically, banana-protein softserve (this photo is from my pumpkin fro yo recipe).  I made a batch in the magic bullet last night with vanilla protein powder, 1/2 a banana, vanilla stevia, and a touch of cookie butter - then topped it with raspberries.  Perfect dessert after power yoga.

TWO breakfasts I’ve been obsessed with recently:

Cottage cheese with strawberries and almonds – trust me!

Lemon cream pie overnight oats: 1/3 cup oats, 1/3 cup milk, 1/3 cup greek yogurt, 1 tsp chia, 1 Tbsp flax-seed, lemon stevia & raspberries.  The combination of chia and flax makes them extra thick and creamy – with a touch of White Chocolate Wonderful for good measure. ;)

Trader Joe’s Black Bean & Corn Enchiladas – 260 calories per package, a quick and delicious Mexican lunch on the go!

TJ’s Spinach Kale Dip.  I can’t believe it took me so long to try this – it’s fantastic!  Can you tell I live less than 5 miles from a TJ’s?

French Toast K-Cups.  They were on sale for $7.99 at BB&B, which is a great price for 18 of them, and I had a 20% coupon.  So I bought two boxes.  My husband thinks I’m a hoarder, and he just might be right.

Sounds like a well-balanced meal plan, right?!

FIVE: the number of yoga classes I’ve taken over the past 10 days

Not just because I want to do yoga more regularly, but because I had a Groupon that expires this weekend.  What can I say – I’m cheap, but I can definitely see an improvement in my practice.

    Lately I’ve been loooving fresh strawberries with almond butter. I put that combo on my overnight oats for breakfast every day this week!

    I love cottage cheese with berries! Have you tried it with some peanut flour? It’s absolutely addicting!

    Banana soft serve with protein powder is a great idea! It’s been ages since I’ve made soft serve, but I bought seven bananas this week, and it’s 90-something degrees outside, so it’s going to happen this week. :)

    I LOVE TJ’s spinach and kale dip! SO good. I tried a truffled ricotta dip over the weekend, and it was love/lust at first bite. Omg.
