Peas and Crayons
Breakfast at work, 8:30 am:

The cold weather meant the return of stove-top voluminous oats. It made about 2.5 cups!

Peanut Butter Banana Oatbran

  • 1/3 cup Trader Joes Oat Bran
  • 1 cup water
  • pinch salt
  • 1/2 banana, sliced thin & whipped in after most of the water was absorbed
  • 5 drops vanilla stevia
  • 1/4 cup plain Chobani stirred in after cooking
  • drizzle of cashew butter on top

Kept me full for hours!

Lunch, at work, 12:30:

Tuna salad – with plain Chobani, green & yellow peppers, relish and Baybel light cheese on sandwich thin

On the side – lots of Vitamin A!  Carrots, red & orange bell peppers, and roasted red pepper hummus.

PM snack, 4:00:

Not just cashew butter – I put a little bit on an apple! :)

Dinner, Houlihan’s, 7pm:

Out to dinner with the husband and my family for a big celebration…

My brother got accepted to Carnegie Mellon University (aka total smartypants college).  We’re all so proud of him and he really deserves it!

Appetizers to share:

White bean hummus, wings for the boys, and goat cheese artichoke fritters.

Yes, fried goat cheese.  &$%*($!  That good.

Entree: Barbeque salmon salad, dressing on the side.  Delish!

    I need to try voluminous oats again. Their first time I tried them it was so bad that I abandoned the idea completely.

    Houlihan’s is a pretty good choice for eating out chain-wise … lot of great options! My husband and I were there last Friday for dinner on the patio :)

    anytime my family goes to anything in Hershey, we always end up eating at Houlihan’s. Their food is so good and they make a great martini!

    cashew butter=my kind of snack. i don’t know what a serving size is yet though…

      The serving on the jar is 2 Tbsp for 170 calories – I find 1-2 tsp is plenty of flavor for oats though!
