The cold weather meant the return of stove-top voluminous oats. It made about 2.5 cups!
Peanut Butter Banana Oatbran
- 1/3 cup Trader Joes Oat Bran
- 1 cup water
- pinch salt
- 1/2 banana, sliced thin & whipped in after most of the water was absorbed
- 5 drops vanilla stevia
- 1/4 cup plain Chobani stirred in after cooking
- drizzle of cashew butter on top
Kept me full for hours!
Lunch, at work, 12:30:

Tuna salad – with plain Chobani, green & yellow peppers, relish and Baybel light cheese on sandwich thin

On the side – lots of Vitamin A! Carrots, red & orange bell peppers, and roasted red pepper hummus.
PM snack, 4:00:

Not just cashew butter – I put a little bit on an apple!
Dinner, Houlihan’s, 7pm:
Out to dinner with the husband and my family for a big celebration…

My brother got accepted to Carnegie Mellon University (aka total smartypants college). We’re all so proud of him and he really deserves it!
Appetizers to share:

White bean hummus, wings for the boys, and goat cheese artichoke fritters.

Yes, fried goat cheese. &$%*($! That good.

Entree: Barbeque salmon salad, dressing on the side. Delish!
The last time I was at Houlihan’s was for my first blogger meetup! When are we doing that again, ladies?!
Dessert: Protein thin mint!
I’ve gotten a few questions over e-mail about where I buy my protein powder, stevia, etc. You can use my code: VAP443 – $10 of a $40 order, or $5 off any order from iHerb.com.
You only have a few more days! Use code “clairetherd” for 20% off a peanut flour purchase by March 31st from Southern Grace Farms.
Don’t forget to enter to win a case of the delicious new Chobani flavors!

Congrats to your brother!!!
Oh I hope soon we do! Would be fun to get together again!
Goat cheese artichoke fritters are like my favorite foods fried in a little ball! YUM!
I need to try voluminous oats again. Their first time I tried them it was so bad that I abandoned the idea completely.
Congrats to your brother! That is quite the accomplishment!

Houlihan’s is a pretty good choice for eating out chain-wise … lot of great options! My husband and I were there last Friday for dinner on the patio
If there is another Pittsburgh blogger meet-up, can I invite myself?
I was thinking the same thing. I had just commented the other day on wanting a Pittsburgh blogger meet-up!

anytime my family goes to anything in Hershey, we always end up eating at Houlihan’s. Their food is so good and they make a great martini!

cashew butter=my kind of snack. i don’t know what a serving size is yet though…
The serving on the jar is 2 Tbsp for 170 calories – I find 1-2 tsp is plenty of flavor for oats though!
I haven’t been to Houlihan’s in forever. The food sounds great though and congrats to your bro!
Oooo BBQ salmon sounds delicious!
Awe, congrats to your brother! What’s he going to major in? We must do the meetup again, it was so much fun!
