First marvelous item on today’s agenda? I tried to catch up blog reading today! Especially with Melissa on her marathon, Laura on her figure competition, and Char on her baby-watch – I’m such a bad blog friend!
Mama Pea’s sunshine salad turned me in to a kale-lover, but I never remember the ingredients for the dressing and always end up Googling it on my phone as I go – this time, her Magic Kale Salad recipe came up instead and I loved it even more. The sesame oil gives it a great aroma, and I added a sliced baked apple, some fontina cheese, and a spritz of truffle oil too. So good. As much as I hate prepping the kale, I feel like a wonderful dietitian for eating it by the bunch.
I prepped for planned date night at Burgatory with that salad and a 5 mile run on Friday – I’ve been dying to try it since they opened a location in Robinson, and the veggie burger was definitely worth the hour-long wait. I’m kicking myself for not trying the “campfire s’mores” or “salted Nutella crunch” milkshakes – or any of the ones with booze. Next time. Saturday night I made my favorite shrimp and asparagus orzo risotto, and served my portion over spinach and topped it with balsamic. I’m all about eating hot food over a bed of spinach – veggie burgers, salmon burgers with barbecue sauce – they wilt the spinach just enough and you feel like you’re eating more than a regular old salad.
I’m embarrassed to admit that it took this long to unwrap all of our wedding gifts, but the kitchen finally (ahem) is almost complete, so I played with my waffle iron Sunday morning after church. Pumpkin & almond butter for me, and plain-old-plain waffles for Adam. Thanks for the awesome waffle iron, Shar! <3
