I’ve been a bad blogger – I mentioned this recipe before I left for the beach and it took way too long to share it with you! I’m trying to get caught up on blog reading, but for now, enjoy the recipe!
My investment in a cherry pitter has been completely worth it.

Not only did I make this cherry cobbler for one about 4 times, I also froze the remaining 8lbs of cherries that I bought while they were on sale.

Simple, low fat topping mixed up in the magic bullet.

A little bit of milk to mix everything together…

Two minutes later, all done – without even turning on the oven.


Approximate nutrition: 275 calories, 4 grams fat, 23 grams protein.
It should probably be classified as dessert, but I like to add some greek yogurt and call it breakfast.

Microwave Cherry Cobbler

Ingredients
- cooking spray
- 1 cup cherries, pitted
- 1/4 cup oats, divided (3 Tbsp + 1 Tbsp)
- 1 Tbsp ground flaxseed
- 1 scoop protein powder, optional (I used MRM vanilla whey)
- pinch cinnamon
- tiny pinch salt
- vanilla stevia (or 1 Tbsp sugar + 1/8 tsp vanilla extract)
- 1 Tbsp milk
Instructions
Spray coffee mug with cooking spray.
Add pitted cherries.
Set aside 1 Tbsp of oats. Combine remaining dry ingredients in a blender or Magic Bullet, pulsing until well combined. Stir in remaining oats.
Add milk & vanilla to dry mixture, then spray evenly on top of cherries.
Microwave 2 minutes, until topping appears solid and dry.
I don’t think I’ll ever get sick of cherries.

I completely support cherry cobbler for breakfast! And I love that this recipe is so easy…and quick! I’ve been getting my cherry fix all summer, and am sad that their season is almost over!
