Okay, so “healthy” is a bit of a stretch here – but I used slightly less butter (and subbed in buttery spread for no saturated fat) and brown rice cereal. They’re whole grain, treat yourself.

Slightly Healthier Pumpkin Crispy Rice Treats
Ingredients (serves 12)

- 6 cups puffed brown rice cereal
- 10 oz mini marshmallows
- 2 Tbsp light vegetable oil spread
- 1 package Jello Pumpkin Instant Pudding
Instructions
Melt buttery spread over medium heat, then add marshmallows, stirring until completely melted.
Remove from heat and quickly stir in pudding mix until dissolved.
Add cereal, stir until well mixed, then press into a greased baking dish. Allow to cool and cut into 12 squares.

Approximate nutrition: (per 1/12 of recipe) 144 calories, 1 gram fat, 33 grams carbohydrate, 1 gram protein
I resisted the urge to add some type of white chocolate / pumpkin spice icing, but feel free.
Last night’s birthday celebration was a success! Aunt Jackie is thrilled to be “blog famous“. We all met at a new to me restaurant, Cafe iO, for dinner. They have a great menu with more than one veg-friendly entrée. After considering fish tacos or a grilled vegetable salad, I picked the portobello burger with peppers, onions, goat cheese, and a salad:

After dinner, it was time for cake and ice cream back at our house!

Those rice crispy treats look heavenly. My favorite part of making those has always been eating all of the leftover stuff that sticks to the bowl with a big wooden spoon

That is a great idea to use the pudding mix! I love that stuff…when I’m not being strict vegan. I have a pumpkin ‘goop’ recipe that I made last year similar to ‘dirt’ but pumpkin, with gingersnaps instead of crushed oreos. I cannot WAIT to make it again!
