Happy Wednesday – time for a day of eats! It was another sunny day, and it got up to 80 degrees – crazy for March in Pittsburgh!

Breakfast #1, 6 am:

1/2 of a slice of a lightened up, sugar-free, whole wheat version of my neighbor’s soda bread recipe. Not perfect yet, but tastes pretty good!
Breakfast #2, 8:30 am:

Peanut butter breakfast cookie – topped with more greek yogurt & some cashew butter.
Lunch, 12:30 pm:

Leftovers! Spicy chile egg casserole, roasted parmesan asparagus and baked beer fries.
PM snack: Gala apple with cashew butter
Post workout snack, 5:30 pm:

Right out of the container – and some grapes and peanut flour granola.
Dinner, 7pm:

My dad, brother and I went to one of my favorite restaurants – Double Wide Grill, which I’ve posted about before. Instead of ordering my very favorite pulled seitan sandwich, I tried the tilapia tacos instead.
Good, but not great. The sauce didn’t have much flavor, the beans and rice were really bland. It’s the first time I didn’t absoultely LOVE my meal here – but now I know to stick to the other dishes I’ve tried.
Best thing that happened to me this week:

Booked a trip to South Beach! Adam’s never been, and one of my best friends lives in Miami – I’m so excited, even though we’re not going until May!
On today’s agenda – strawberry & greek yogurt chia overnight oats, more leftovers for lunch, a spin class, and dinner is yet to be determined. Have a great day!
What’s the best thing that’s happened to you this week?

This food looks so good! I want the recipes for the sides, though!! Mmmmm
Also, since I see ur a foodie in Pittsburgh – have you been to Salt of the Earth? Food & Wine mag had an article in the fall/winter about Top 10 Dishes of 2011 and their Wild Salmon with Sea Beans & Buckwheat was on it. Wish me luck trying to drag my boyfriend there when we’re in town for his friend’s wedding

I have NOT been there yet, but it’s definitely on my list of places to try! I’ve heard great things about it, too!
If I’m down in Miami when you visit we should plan to meet up! I only live about 4 hours away now

Yes, the more dessert-like, the better!
Best thing that happened to me today: this weather! And I’ve been to south beach once, but I was 17 and there in december for a Habitat for Humanity trip. Haha so I didn’t really “experience” the beach, but I’m sure you’ll have a great time!
Post work beer on the deck after work–unprecedented in March in MI! Best thing ever!
