Sorry for the lack of contact yesterday – I’ve just been outside enjoying the weather more than sitting on my computer. Let’s get caught up on good eats from the weekend…
Tuscan quiche and iced coffee at a new-to-me coffee shop by our new house.

I stopped in after hot yoga on Saturday. The quiche was packed with veggies, garlic and herbs, definitely making it an all in one meal.
They also sell gelato, which means Adam and I will be spending a lot of time here this summer…

I just might have made a trip to the outlets to continue my workout (you know, lifting bags, speed walking….)…

I wanted to buy it online when it was $129, but didn’t want to pay the shipping. I snagged it for a total of $99, when it was originally $297. Woop.
You know it’s spring when you officially switch to iced coffee (and drive around with the top down more often than up).

This was a batch made at home, but this morning I’m sipping S’mores flavored coffee over ice and LOVING it.

Amazing new crepe concoction Sunday morning after spin class. Recipe to come!

The return of chile egg casserole – this time using canned Rotel tomatoes with green chiles, extra red & orange bell peppers, and Mexican blend cheese – spicy!

Served with Ashley’s beer soaked fries and roasted asparagus.

And an adapted version of the twins’ protein thin mints.

- 3 scoops chocolate whey protein
- 3 Tbsp melted coconut oil
- 1/4 cup dark cocoa powder
- 3 Tbsp almond milk
- 1/2 tsp peppermint extract
- 1/2 tsp vanilla stevia
Approximately 70 calories a piece! The texture is more chewy than a cookie, but the taste is spot on!

I might grab a free Rita’s later – they do have sugar free flavors!

Those thin mint protein cookies sound so good! I will need a healthy replacement when I run out of my Girl Scout Thin Mints, and these sound like the perfect addition to satisfy my sweet tooth!
They’re more fudgy, but the taste is right!
Yum! I wish I had a gelato place near me! I haven’t tried any blog recipes lately, but I am looking forward to hearing more about your crepes.

I’m hoping its as good as authentic gelato – some of the places make it will all hydrogenated oils and other nasty stuff!
I JUST made the switched to iced drinks yesterday. It just felt wrong to be wearing capris and ordering a hot drink! Nice snag on the Coach purse! I have one from last year that I need to bust out soon…it’s time for the return of all things white! yay!

Yeah, I wasn’t keen on buying new things – they might not be 100% the same but they taste pretty good!
I am excited to be outside for spring! The weather has been in the low 80s by me. I tried Tina’s “Oatmeal” Minus the Oats this morning and they were amazing!

I am not a Rita’s fan. I’ve tried both their sugar and sugar-free flavors. Didn’t enjoy!

I like about 4 bites of it and then I’ve had enough… unless it’s the cookies and cream flavor, then it’s good to the last spoonful!
CUTE purse! We have some fab outlets near us as well. I got a similar deal on my pink Coach and I think it’s nearly time to break that puppy out for Spring!

Have you had the sugar-free Rita’s before? There is one near me but I’ve never tried it.
I’ve had it in the past and it tasted just fine, but I’m used to sugar free things! They typically only offer one or two flavors at a time.
I love the idea of making Thin Mints into protein bites! Love it!
I have NEVER had gelato!! We are going to Disney World in November and I’ve heard there is an Italian stand that offers amazing Gelato. I’m looking forward to that!
