This past weekend was a whirlwind! When we last “spoke”, I was off to see [the Wizard] Oz with my folks.
The movie was kind of lame, but the cupcakes that my mom sent home for Adam and I were not! They’re from a new local bakery, called Batter and Dough, and they were incredible. Some other gourmet cupcakes from places in Pittsburgh have been too dry or had lame icing, but all of these were perfectly balanced.
The one on the top left had a whiskey flavored green batter, but the rest were amazing – the chocolate ganache and cappuccino flavored frostings were my favorite. Adam and I split one each night!
On the subject of sweets, this is the dessert I made for my in-laws Saturday night:
A peach twist on my Apple Upside Down cake. So moist and sweet, with a hint of lemon and healthy plain Chobani – I want to adapt the batter for cupcakes next.
The main course Saturday night was Beef Burgundy, a dish my parents made pretty often while I was growing up. Just the smell of it cooking slowly in the oven makes me think of home (and the days I used to eat red meat!). I didn’t snap a pic during dinner, but here are Adam’s leftovers yesterday:
Not visually appealing, but it’s slow cooked beff with mushrooms in a red wine and onion sauce over egg noodles. It went over pretty well!
My dinner was leftovers from Friday night, when I made a creamy roasted red pepper sauce with cheese tortellini and spinach. Again, not pretty, but satisfying and simple to make. I used my old lightened up recipe but added 3 Tbsp fat free half & half instead of the ricotta.
As if the cake and cupcakes weren’t enough, I bought Adam donuts after an early morning yoga class on Sunday.
And I sampled a few myself.
