I spent a lot of time in the kitchen again – as a result of spending a lot of money at Trader Joes. Woops.
I also had random bits of veggies leftover, so I wanted to use them all up in my lunch on Saturday. I was craving tuna salad, but the snowy weather made me want something warm – tuna burgers sounded delicious!
I chopped up a mix of white onion, celery, green pepper, carrots, and cabbage to mix in with the tuna.
The mix was held together simply with one egg white (but may have even worked without it).
Making tuna salad at home is healthier than 99% of restaurants – you can control the mayo, which is the big culprit of added fat and calories. Make sure you buy tuna canned in water, not oil. This recipe was flavorful with no mayonnaise at all!
Compared to a 6 inch tuna sub from Subway, which I might have chosen 5 years ago, I’m saving about 400 calories and 30 grams of fat!
- 1 can chunk light tuna in water, drained well
- 2 Tbsp each: white onion, celery, green pepper, carrots, and cabbage, all finely chopped
- 1/4 cup raw oats
- 1/4 tsp dried thyme
- 1 egg white, lightly beaten
- 1/2 tsp lemon juice
- pinch salt
- Combine all ingredients in a large bowl. Shape into 2 patties.
- Spray heated skillet with cooking spray.
- Cook patties 3-4 minutes on first side, gently flip, cover, and cook an additional 3-4 minutes on second side.
Approximate nutrition (per patty, makes 2): 160 calories, 3.5 grams fat, 8 grams carbs, 24 grams protein

Dessert was protein packed too – in the form of brownie batter Chobani yogurt. 1 Tbsp almond meal, stevia drops, and 1.5 tsp of dark cocoa in this one.
The longer it sits, the better it tastes – but I never wait too long.
