A homemade dinner last week: Skinnytaste crab cakes, sautéed yellow squash, and sweet potatoes roasted with coconut butter on the skin (I think I read a comment where Matt suggested it).  Amazing.

A leftover sweet potato became a meal of its own, topped with black beans, some spices, and goat cheese.  Weird but delicious – a simpler version of the sweet potato socca.

My brother got me this amazing birthday present – how could someone so obsessed with popcorn NOT have their own popcorn maker?

It even melts butter in that little compartment on top while it pops the kernels.  So good.

I’ve been to Amel’s three times in the past 2 weeks.  I might have a problem.

Grilled veggie salad with roasted beets,  artichokes, snap peas, tomatoes, grapeleaves, and fried pita.  And hummus for the table.  So fresh and so filling.

Super filling breakfast of the week – the protein breakfast cheesecake tart in a small dish ( = thicker “crust”) and a topping combination of whipped cottage cheese and passion fruit Chobani. 

I would repeat all of these meals in a heartbeat!

      I got mine from Target for about $15 and we use it at least once per week! Totally worth it.

    My meals were quite boring this weekend… It’s been way too long since I’ve had a sweet potato. I think I haven’t felt like them because of the summer heat? I need to change that! Roasting it with coconut butter on the skin sounds incredible.

    Confession..there’s a mediterranean restaurant in Raleigh and I went 4x during 1 week. Not ashamed at all! Any meal at home is a best!
