I had a food filled, busy weekend.

Delicious sushi for dinner (take out)…

With a huge serving of edamame…

Lots of brownie batter yogurt….

This was a more “snack sized portion”

  • 6-8oz plain greek yogurt
  • 1.5 tsp dark cocoa powder
  • 4 drops vanilla stevia
  • 1 Tbsp almond meal

Saturday morning kicked off with a hot hip hop yoga class, which was only moderately warm and the music was not hip hopp-y,  but still a great workout.  Breakfast: egg whites with avocado and nooch on a corn tortilla.

Saturday snackage: peanut apple crisp for one (recipe to come)

Saturday dinner: lightened up shrimp & asaparagus orzo “risotto” (recipe to come)

Cookie craving: TRIPLE peanut cookies (yes, you have to wait for this one too)

Soft, super peanut-y, and 75 calories a piece.

Sunday morning breakfast was the winner: homemade sugar free vanilla soy latte..

And chocolate protein waffle with strawberries.

The last case of strawberries we purchased were SO delicious and ripe – they can be such a toss up this time of year!  Check back in later this week for some of these recipes! ;)

    oh man, all of your eats are looking wonderful! they are making me hungry. ;) my best breakfast this weekend was an egg white omelet stuffed with mushrooms, green peppers, avocado, and pepper jack cheese. the flavors were amazing together!

      I love a good omelet on the weekends. It took me way too long to try avocado with my eggs!
