The 4+ inches of snow that fell here last night kept me from my favorite spin class of the week this morning. I did about 30 minutes of yoga + an arm workout at home, but it’s just not the same! Hopefully I’ll make it to an evening spin class after work. Let’s try to snap me out of this funk and talk about marvelous things instead, thanks to Katie’s weekly link up!
Friday night we checked out a new local burger joint, called Bubba’s (owned by a Pittsburgh radio DJ) for fish sandwiches. Full review to come, but I was driving and decided we had to stop for frozen yogurt after.
Since most of the flavors are pretty high in sugar and therefore calories, I chose mostly original tart (35 calories per 1/2 cup), with fresh mango and sprinkles, plus a taste of Chocolate mint cookie with cookie topping.
Saturday morning started with 7:30 AM hot power yoga and coffee immediately afterward – a freebie thanks to the rewards program! I don’t usually order caramel macchiatos, but this was yummy.
Followed up with a healthy green smoothie – banana, almond butter, spinach, almond milk.
The sun actually did shine on Saturday, so Lexi and I ventured to the park for what I planned to be about a 20 minute walk, but ended up being almost an hour and 4 miles thanks to “exploring” a new trail. For dinner, I made a version of my Shrimp and Asparagus Risotto, using brown basmati instead of whole grain orzo, which took about 2 hours to cook. Lots of stirring!
I also experimented with this vegan samoa cookie recipe, which was the first time I’ve used coconut oil in baking. I was lazy when it came to cutting out the centers and drizzling the chocolate, but they had a tasty caramel/coconut/chocolate flavor for sure.
