Breakfast, 6:15 am:

Microwave breakfast cake with sugar free syrup & almond butter.

Morning snack: (unpictured) banana & sunflower seed butter

Lunch, 11:45, at work: I didn’t have edamame (wish I did)…

But I did have Trader Joe’s sushi!  This shows up on so many WIAW posts that I clearly need to make an effort to be more creative with my Tuesday meals.

At work snack (since I didn’t have protein from the edamame): 2% plain Chobani with TJ’s frozen berry/cherry blend.  Like fro-yo, but  way healthier. :)

PM Snack: green bell pepper & celery strips with hummus- it figures I didn’t photograph the only green thing I ate!

Dinner, 7pm: Sweet potato, black bean & goat cheese socca pizza

    I love kale. I think I buy about 2-3 bunches EVERY week! I swear I could put it in anything. I need to get back into the WIAW. I’ve been so bad for photographing lately…only because my memory card is full and I don’t know what to delete off of it ha!

      I go in spurts with kale – sometimes I use it all week long and then I’ll go months without buying it!

    I was eyeing that socca pizza too! You know I love my sweet potatoes. can’t wait to see what you did with it! :)

    I’ve never tried to add frozen fruit into my greek yogurt, I should give it a try!

      It’s frozen in the morning, but by the time I eat it in the afternoon it’s melted in the fridge and the juice flavors the yogurt. :)

    I saw that recipe too- I want to try making a sweet potato crust of my own!
    I like Brocolli, Brussel Sprouts, Spinach, Green Peppers…the list goes on!
